The cool clean waters of Australia’s southern coastline are the source of Dover Fisheries’ abalone.
Dover Fisheries is a hive of activity. An assignment of fresh, plump molluscs has just been delivered from the pristine waters of Australia’s southern coastline and it’s action stations on the factory processing floor.
With military precision, each precious abalone is inspected for blemishes and damage and is then graded according to colour and texture. After cleaning, the shellfish are graded once again and packed according to their quality and size.
Within a few hours of delivery, the abalone have undergone a series of scrupulous inspections, have been thoroughly cleaned and graded, packed and canned, and are ready for dispatch to the four corners of the world.
It is this attention to detail that has seen Dover Fisheries recognised as one of the world’s quality suppliers of abalone. They were named the NAB Agribusiness Export Award winner in last year’s Premier’s Food Awards.
Dover Fisheries is one of Australia’s largest abalone processors and exporters with 92% of sales exported to markets including China, Hong Kong, Japan, Singapore, USA and Canada. They recently introduced a non-chemical, natural style canned wild caught black lipped abalone to the Hong Kong market.
Established in 1976, today Dover has 14 staff - and up to 60 during seasonal periods. The business also works collaboratively with abalone farmers, forming a unique value chain that was recognised by their win of another Premier’s Food Award, the Food Adelaide Value Chain Award.
General Manager David Pickles says that their state of the art processing factory in South Australia has access to Australia's major shipping and air routes to the rest of the world.
“A regular shipping service to most South East Asian ports ex Melbourne or Port Adelaide departs every seven days.
“Similar frequency services are available to Japan, the west coast of USA and also to Europe. Airfreight consignments can be landed almost anywhere in the world within 48 hours.
“Abalone tends to be sold in very traditional forms. Canned, dried and frozen, with very little complex value adding,” said David.
“Looking to the future we plan to introduce some innovative products to the abalone market, this is a necessary step to ensure that Australian abalone retains its market leading position against increasing worldwide competition.”
